Physico-Chemical Properties of Hydrolysis Products  from Channel Catfish Skin

摘要:以斑点叉尾鮰鱼皮为原料,在低于蛋白变性温度的条件下利用乙酸提取和乙酸/木瓜蛋白酶提取的2种不同水解产物,对其理化性质进行系统测定.实验结果表明,乙酸水解产物和酶溶性水解产物的热变性温度分别为30~35℃和28~35℃;酶溶性水解产物在溶解性能、乳化性能和乳化稳定性方面优于乙酸水解产物,而在吸水性能、吸油性能、起泡性以及泡沫稳定性方面,乙酸水解产物明显好于酶溶性水解产物.

Abstract: Hydrolysis products of channel catfish skin was extracted by using acetic acid method and acetic acid + papain method,and their physico-chemical properties were described.Results showed that the denaturation temperatures of acid-soluble hydrolysis products and acetic acid + papain hydrolysates were at 30~35 ℃ and 28~35 ℃ respectively.The dissolubility,emulsify capacity and emulsifying stability of products obtained by acetic+papain method were superior to that obtained by acetic acid method,but the latter produced a better water absorption capacity,oil absorption capacity,foaming capacity and foam stability than the former.
